Wagyu Beef Tongue

Wagyu Beef Tongue

Beef tongue is exactly what it sounds like, the whole tongue muscle of the cow, harvested as a single large cut. It's one of the most worked muscles on the animal, used constantly for eating and grazing, which gives it a dense, firm texture before cooking. But don't let that fool you: with the right preparation, beef tongue transforms into one of the most tender, richly flavored cuts you'll ever taste.

In Wagyu cattle, the tongue benefits from the same exceptional genetics that make the breed famous. The elevated fat content and superior muscle quality carry through to this cut, resulting in a richer, more buttery flavor than you'd find in conventional beef tongue.

What Can You Do With Wagyu Beef Tongue?

Beef tongue is a celebrated delicacy across many culinary traditions. From Japanese izakayas to Mexican taquerías to European charcuterie boards. Here's how to make the most of it:

  • Braised & sliced: The most common preparation. Simmer the tongue low and slow in seasoned broth for 3–4 hours, peel away the outer skin while warm, then slice and serve with a vibrant salsa verde, horseradish cream, or a rich braising jus.
  • Tacos de lengua: A beloved Mexican street food classic. Braise until tender, dice or shred, and serve in warm corn tortillas with white onion, cilantro, and your favorite salsa.
  • Yakiniku & grilled tongue (gyutan): Thinly sliced and grilled over high heat, a staple of Japanese BBQ. The Wagyu fat content makes each slice incredibly juicy and flavorful with just a touch of char.
  • Charcuterie & pressed tongue: Cooked, pressed, and chilled, beef tongue slices beautifully for a sophisticated addition to a charcuterie board or deli-style sandwich.
  • Tongue pastrami: Cure and smoke the tongue for a show-stopping pastrami that rivals any brisket version.

Wagyu beef tongue is a true nose-to-tail treasure. Deeply flavorful, surprisingly versatile, and a standout for adventurous home cooks and fine dining chefs alike.

Superior Genetics & Bloodlines
We carefully select Pureblood Japanese and American Wagyu genetics for docile temperament, superior marbling potential, and predictable growth. This precision allows us to minimize waste and ensure every animal reaches its full potential, resulting in the premium cuts you experience.

Pasture-Raised with Purpose
Our cattle thrive on open pastures with access to nutrient-rich forage including alfalfa, clover, and orchard grass. This high-protein diet promotes optimal gut health and natural development, setting the foundation for exceptional marbling and flavor.

Grain-Finished to Perfection
Unlike large feedlots, we finish our Wagyu with a carefully balanced grain blend tailored to their protein needs. This measured approach enhances marbling without excessive fattening, resulting in the buttery texture and rich flavor Wagyu is known for.

Clean Water, Calm Living
Our state-of-the-art watering system ensures every animal has access to fresh, clean water throughout the day. Combined with spacious living conditions and low-stress handling, our cattle enjoy the calm, humane environment that directly translates to superior meat quality.

Never Hormones, Never Antibiotics
We're committed to raising our Wagyu naturally—no hormones, no antibiotics, no shortcuts. Just patient, sustainable farming practices that honor the animal, the land, and your family's table.

When you choose Marbling Meadows, you're supporting regenerative agriculture and bringing wholesome, premium Wagyu straight from our family farm to yours.

Growing up on a farm, I learned that raising your own livestock isn't just about food—it's about connection, purpose, and the satisfaction of doing something meaningful with your hands. Those early years shaped everything I value: hard work, family, and the simple joy of caring for the land and animals.

Life took me away from farming for a while, and something felt incomplete. Then I met a fellow farmer whose thriving herd and children working happily alongside the cattle reminded me of what I'd been missing. That moment changed everything.

I knew I had to get back to raising livestock. Mary, our first cow, marked the beginning of Marbling Meadows and our commitment to producing premium Wagyu with integrity. What started with one animal has grown into a legacy farm where Leah and I work side by side, and our children experience the beauty of agriculture firsthand while families like yours enjoy truly exceptional beef.

Our Vision

We're not just raising cattle—we're building something our kids will be proud to continue. Every decision we make, from selecting superior Pureblood Japanese and American Wagyu genetics to implementing regenerative farming practices, reflects our commitment to quality, sustainability, and the values that matter most: family, hard work, and honest food.

When you choose Marbling Meadows, you're supporting a small family farm dedicated to producing world-class Wagyu while preserving the land for future generations. You're also bringing meat to your table that's raised with care, finished with precision, and delivered with pride.

From our family to yours—thank you for being part of our story.
