Bacon Wrapped Meatloaf
Ingredients
3 pounds - Ground Beef
1 medium - Carrot
1 stalk - Celery
3 ounces - Mushroom
1 medium - Onion
2 - Garlic Cloves (minced)
3 sprigs - Fresh Thyme
1 - Farm Fresh Egg (beaten)
6 slices - Bacon (or as many as needed to cover the meatloaf)
2 teaspoons - Worcestershire Sauce
1 1/2 teaspoons - Kosher Salt
1/2 teaspoons - Black Pepper
1 cup - Bread Crumbs
1/2 cup - Condensed Tomato Soup
BBQ Sauce
Directions
Chop up all the vegetables (carrots, celery, mushrooms, and onions) with a food processor or chop finely with a knife. Microwave the vegetables for approximately 2 minutes or until they are softened with a wet paper towel over it (this will keep the vegetables from drying out).
In a large mixing bowl, mix together the ground beef, carrots, celery, mushrooms, onions, garlic, thyme, egg, worcestershire sauce, salt, pepper, bread crumbs, and tomato soup.
Put this mixture into a 11"x 5" pan.
Weave the 6 pieces of bacon together and place on top of the meatloaf mixture.
Start smoking and this usually takes approximately 5-6 hours at 250 degrees.
When the meatloaf and bacon are almost done,turn the heat up to 300 degrees, brush on the BBQ sauce and let that caramelize until the meat is cooked thoroughly.
